MUTTON BURRAH RECIPE
Make this juicy, smoky, restaurant-style Mutton Burra at home with simple ingredients! This tandoori-style mutton burra is perfectly marinated, soft, flavorful, and cooked to perfection. Marination Ingredients for Mutton Burra
500–700 g mutton burra (ribs)
1 tbsp raw papaya paste (for softening)
1 tbsp grated ginger
6–7 garlic cloves, crushed
1½ tbsp lemon juice
Few coriander leaves with stem
1 tsp Kashmiri red chilli powder
1 tsp red chilli powder
1 tsp roasted cumin powder
1 tsp garam masala
1 tbsp tandoori masala (optional)
Salt to taste
Cooking Method
1️⃣ Pressure Cooker Cooking
Add the marinated mutton burra into the pressure cooker.
Add half cup water
Close lid and cook on medium flame.
Cook for:
✔️ 3–4 whistles if ribs are small/tender
✔️ 5–6 whistles if ribs are thick
Open the lid, check tenderness.
Reduce the gravy by cooking open for 2–3 minutes (if water remains).
2️⃣ Dhungar (Smoking the Mutton)
Heat a small piece of charcoal on the gas until red.
Put it in a small steel bowl inside the meat.
Add a few drops of oil or ghee.
Cover immediately for 1–2 minutes for deep smoky flavor.
(Do not over-smoke; 2 minutes is perfect.)
3️⃣ Air Fryer Grilling (Final Tandoori Style)
Preheat air fryer to 200°C.
Grease the air fryer basket lightly with oil.
Place the smoked burra pieces inside.
Air fry for 8–10 minutes, flipping at 5 minutes.
For extra charring, cook 2 minutes on high heat.
You will get:

✨ Soft, juicy inside
