Javvarisi payasam recipe (sagu payasam ) with lauki
Javvarisi payasam is a sweet dish made with sago or tapioca pearls, sweetener, milk, cardamoms, cashews and raisins. Javvarisi is the tamil name to tapioca pearls & is often used to make payasam or KHEER. This is a simple recipe that can be made in no time during festivals or occasions.
I make it sometimes during the hot summer days as sago is said to balance the summer heat in the body.
Ingredients
Grated and boiled lauki ( bottle gaurd ) - 500gms
Milk 🥛- 1 litre
Heavy cream - 200ml
Sagu - 100gms
Sugar- 400gms
Dry fruits - almonds and cashews
Ghee - 7tbsp
Whole garam masala
Vanila Essence- few drops
Saffron
Procedure
Grate and boil the lauki
Wash the sagu and soak it for half an hour
Take a heavy bottom vessel here I have taken earthen pot ,
Add ghee to the pot , and add the dry fruits
And whole garam masala
Once they turn brown
Add the boiled lauki and fry it nicely and add the milk 🥛 and boil it well for five minutes and now add the soaked sagu to the milk and cook it on low flame for 30minutes keep stirring in between and check the sagu if it’s cooked well add the sugar and cream finally and cook for five minutes more on low flame !
Add saffron strands ( optional )
Your payasam is ready :)
