This recipe was served at several of the Harvey House location, especially those with access to the fresh ingredient, such as salmon, mint and of course, pistachios.
This is an easy recipe, actually. You'll need a really good chopper or food processor, as the pesto sauce has to be pureed in order for this to work.
If a pound of salmon is used, it will feed 2-5 people. It can be paired with asparagus, Brussel Sprouts or just about any green vegetable!
