Welcome back to BakeWithBaum!
Today I’m making the softest, fluffiest pumpkin cookies topped with a silky cream cheese frosting. These cookies take 10 minutes to assemble, 12–15 minutes to bake, and they’re honestly one of the easiest fall desserts you can make. Perfect for those holiday get togethers this year!
📋 Ingredients:
• 1 cup softened butter
• ⅔ cup brown sugar
• ⅔ cup sugar
• 1 egg
• 1 tsp vanilla
• 1 cup canned pumpkin
• 2 cups all-purpose flour
• 1½ tsp cinnamon
• 1 tsp baking soda
• ½ tsp salt
• ¼ tsp baking powder
Cream Cheese Frosting:
• ¼ cup butter, softened
• 4 oz cream cheese
• 2 cups powdered sugar
• 1½ tsp vanilla
👩🍳 Directions:
Cream together butter + sugars.
Add egg, vanilla, and pumpkin.
Dump dry ingredients straight into the mixer and combine.
Scoop onto a baking sheet and bake at 350°F for 12–15 minutes.
Cool completely, then frost with cream cheese frosting.
These cookies are super soft, perfectly spiced, and so easy anyone can make them.
