Ingredients:
For the Filling:
250g semolina (rava/suji)
250g whole wheat flour
250g sugar
2–3 tbsp ghee
½ tsp cardamom powder
2–3 tbsp chopped dry fruits (almonds, cashews, raisins)
For the Outer Covering:
1 cup all-purpose flour (maida)
1–2 tbsp ghee or oil
Water (as required to knead)
For Frying:
Ghee or oil (as required)
👩🍳 Making Process:
1️⃣ Roast the Semolina:
Heat a pan on low flame and dry roast the semolina until it turns light golden and aromatic.
2️⃣ Add Ghee & Dry Fruits:
Add ghee to the roasted semolina, then add chopped dry fruits and roast for 1–2 minutes.
3️⃣ Add Wheat Flour:
Add whole wheat flour to the mixture and roast everything together on low flame for 3–4minutes until well combined and fragrant.
4️⃣ Prepare Sugar Syrup:
In a separate pan, add sugar and a little water. Heat until the sugar completely dissolves and forms a slightly sticky syrup (no need for one-string consistency).
5️⃣ Mix the Filling:
Slowly pour the warm sugar syrup into the roasted mixture. Add cardamom powder and mix well. Let it rest for 5–10 minutes to set slightly.
6️⃣ Prepare the Dough:
In a bowl, mix all-purpose flour with ghee. Rub well, then gradually add water to knead a medium-stiff dough. Cover and rest for 10–15 minutes.
7️⃣ Shape & Fill:
Roll the dough into thin discs (like papad). Place the prepared filling in the center, seal properly, and shape as desired (round or gujiya style).
8️⃣ Fry:
Heat ghee or oil on medium flame and fry until golden brown on both sides.
