Peking duck takes days to make and you need a lot of space to do so. My little Brooklyn kitchen is not equipped to attempt and entire Peking duck so I thought we could try making Peking style duck breast. While this is not ACTUAL Peking duck, the result is a succulent duck breast with all of the Peking duck flavors, homemade Mandarin pancakes, and a jazzed-up hoisin sauce.
Ingredients:
Duck:
4 skin-on duck breast
2 TBS sugar
2 TBS salt
2 TBS Chinese 5 spice
1 tsp dried mandarin peel (optional)
Glaze:
2 TBS Shaoxing wine
2 TBS Chinese red vinegar (sub with red wine or black vinegar)
4 TBS Maltose (sub with barley malt, but this may change the flavor a bit)
Pancakes
1.4 cups AP flour (plus extra for dusting)
1/2 tsp kosher salt
1 TBS vegetable oil
2/3 cup boiling water
Sauce:
2 TBS hoisin sauce
1 TBS dark soy (sub with regular soy)
1 TBS sambal (sub with sriracha)
1 TBS water
