Firefighter Seth Wedemeyer takes after his father and stepmother when it comes to fighting fires, but when it comes to cooking he has his own talent. Check out his specialty, Zucchini Noodle Bolognese with breadsticks.
Ingredients:
1 or 2-Zucchini per person
4 Cloves Garlic
1 yellow onion
10 tomatoes
10 Basil Leaves (fresh)
3 lbs. Sausage
1 tbsp oregano
1 tbsp thyme
1/2 tbsp balsamic vinegar
1 tbsp lemon juice
1/4 stick of butter
1 cup of whipping cream
1 cup shredded Parmesan
Salt and pepper to taste
1 pizza dough
Instructions:
Start by preheating your oven to 425’, then start removing stems and halving tomatoes. Place them on a baking sheet and then into the oven letting them roast until the skins brown and peel back (about 1 hour).
While the tomatoes roast, chop your onion and garlic add them to a pan on medium heat, and sauté them until clear and fragrant.
As the garlic and onion sauté you can begin removing the stem and butt of the zucchini and chopping them in half vertically so you have shorter round halves. You will need a zucchini noodle maker for this step as well. Start shredding your zucchini until the onion and garlic are soft.
Once the onion and garlic are soft add in your sausage and cook on medium heat until browned and cooked through. Then set it on low and stir occasionally.
Continue shredding zucchini until tomatoes are ready to be peeled.
Remove the tomatoes from the oven once the skins are browned and peeling or shriveling. Let them cool until you can touch them and then remove the skins and through the meat of the tomatoes into a blender with your balsamic, oregano, and thyme, blend until smooth, and then add to a separate pan and simmer for 15 minutes.
Shred whatever remains of your Zucchini and then prep your pizza dough with a lot of flour. You can hand flatten the dough and then use a rolling pin or spin it by hand.
Use non-stick spray on a cast iron or cooking sheet and add your pizza dough then throw it in the oven at 425 and continue checking until slightly brown on top.
While the sauce simmers and the dough bakes you can sauté your zucchini on high heat in a pan with olive oil for about 5 minutes stirring frequently if it goes too long it will be soggy!
Once the breadsticks are slightly browned, pull them out and add butter, Parmesan, and garlic powder then put them back in the oven to brown a little more.
Combine your red sauce, whipping cream, and parmesan with your meat bring to a simmer stirring, and then shut off the heat. Once the breadsticks are brown pull them out, cut them up, and you are ready to eat!
