Have you ever sat at your table, looked at a dumpling, and said, where did this come from? Sure, it could have come from your kitchen, or your waiter could have brought it to you, but how was it invented? In the following paragraphs, we’ll tell you the story behind one of the most famous wrapped foods in the world, the dumpling.
Dumplings were invented 1800 years ago in China by a famous medicine man named Zhang Zhongjing. During a cold winter, he noticed villagers suffering from frostbite. He wanted to do something to save them, so he wrapped scraps of dough around meat, crafting them into ear shapes to promote blood flow to the ears. Little did he know that his local medical remedy would would evolve to become a worldwide culinary phenomenon.
As dumplings spread around the world through the Chinese diaspora, local communities started experimenting with their favorite ingredients. In southern China, locals began experimenting with various seafood fillings, giving birth to an array of dumplings. They came up with a concept called Dim Sum, which loosely translates to “little treasures” in Cantonese. People could simply pick the dumplings they want to ate from a steam cart, and at the end of the meal, the wait staff would count the baskets and charge the customers for their food.
Shrimp became a popular filling. In fact, the most popular dumplings at a Dim Sum meal are Shumai, which are pork and shrimp dumplings, and Hargow, which are shrimp dumplings wrapped in a rice flour wrapper. Today, you can enjoy Dim Sum around the world, and some of the best is served in New York City’s Chinatown.
