Today's Recipe: Asparagus Frittata
12 asparagus spears
3 large eggs
6 egg whites
2 Tbsp. 2% milk
½ tsp salt
½ tsp pepper
1/4 cup shredded parmesan cheese
2 Tbsp. onion, minced
1 tomato, seeded and diced
1 Tbsp. olive oil
Preheat oven to 350 degrees. Cut the woody ends from asparagus and discard ends. In a bowl, whisk together eggs, egg whites, milk, salt and pepper, and parmesan cheese. Set aside. Add asparagus and a small amount of water to a large skillet and cook over medium heat until crisp-tender. Drain water from pan and remove asparagus. Cut each spear to half the length of the pan you intend to bake the frittata in. Leave the end with the tip whole, but dice the ends. Add diced asparagus, onion, tomato, and olive oil to skillet. Cook over medium heat for several minutes. Add egg mixture and cook 3-5 minutes, until nearly set. Arrange remaining stalks on top of eggs in a circle, radiating out from the center. Bake for 7-8 minutes or until completely set.
