Cooking Octopus, Part 3 🐙
This is where everything finally comes together. The shrimp finishes curing in lime, the octopus gets folded in, and the rest is just chopping, tasting, and mixing — all the vegetables, all the textures, all the good stuff.
I also make a simple guacamole with perfectly ripe avocados. I like mine a little chunky, with texture. For me, the bare minimum is avocado, lime, salt, a little onion, and cilantro. Anything extra is welcome — but this is the foundation.
And then there’s mayonnaise. I always thought I loved mayo… but I never realized I had a limit until I moved to Mexico. It’s on a lot of dishes here — drizzled, spread, dolloped with enthusiasm. Living here has definitely taught me where my personal mayo line lives 😅
