Mango Puli Pitha : A Delicious Bengali Dessert Recipe
Ingredients:
1 cup rice flour
1 ripe mango, peeled and diced
1/2 cup jaggery (or sugar), grated
1/4 teaspoon cardamom powder
A pinch of salt
Water, as needed
Oil, for frying
Instructions:
In a mixing bowl, combine the rice flour, grated jaggery (or sugar), cardamom powder, and a pinch of salt. Mix well.
Gradually add water to the mixture and knead it into a smooth dough. The consistency should be similar to that of chapati dough.
Cover the dough and let it rest for about 15 minutes.
In the meantime, take the diced mango pieces and blend them in a blender or food processor until you get a smooth pulp. Set aside.
After the resting time, take a small portion of the dough and roll it into a small circle or disc using a rolling pin. Repeat this process with the remaining dough.
Place a spoonful of the mango pulp in the center of each dough circle.
Fold the edges of the dough circle over the mango pulp to form a sealed dumpling or pitha. Make sure the edges are properly sealed.
Heat oil in a deep pan or kadai for frying.
Once the oil is hot, carefully drop the prepared mango puli pitha into the oil and fry them on medium heat until they turn golden brown and crispy.
Remove the fried pithas from the oil using a slotted spoon and place them on a paper towel to absorb any excess oil.
Repeat the frying process with the remaining pithas.
Allow the pithas to cool slightly before serving.
