Low calorie dessert. Soft, fluffy, sweet.
Ingredients:
2 eggs
50ml low fat milk
6 tbsp (about 45g) skimmed milk powder
1 tbsp erythritol (or other granulated low cal sweetener)
¼ tsp baking powder
Pinch of salt
½ tsp vanilla extract (optional but recommended)
🔪 Instructions:
Preheat your oven to 170°C (conventional) or 160°C (fan).
Mix the wet ingredients: In a bowl, whisk the eggs, milk, sugar, and vanilla until smooth.
Add dry ingredients: Stir in the milk powder, baking powder, and salt until you get a smooth, pourable batter.
If the batter seems extremely thick, add 1–2 tsp extra milk.
Pour into a greased or lined 4x5 inch baking dish (or ramekins).
Bake for 25–30 minutes, but keep an eye on the top:
If the top is browning too quickly (after ~15 minutes), cover loosely with foil or parchment to prevent burning while the center finishes cooking.
The cake is done when:
The top is golden.
The center is just barely wobbly or a toothpick comes out mostly clean.
Cool for 5–10 minutes before slicing. It firms up more as it rests!
Optional: top with low calorie caramel or chocolate sauce
⚠️ Important Tips:
This is a soft, custard-style cake—not a fluffy sponge.
It’s normal for it to look underdone halfway through; don’t panic!
Let it bake low and slow for even setting.
