Hello and Hafa Adai today I’m making a new recipe “strawberry butter mochi” with a crusted outer layer and a chewy inner layer this is the perfect dessert and daily treat for you and the family. The strawberry flavor goes so well with this dish it’s a must try. Inspired to me by the Ube butter mochi recipe. Ingredients:
-4 lg eggs
-1 3/4 cups of sugar
-2tsp vanilla extract
-1 tsp strawberry extract (optional for a more intense strawberry flavor)
-1 can + 1/4 cup of coconut milk OR + 1/4 cup of whole milk
-1 lg pk of strawberry gelatin/jello mix
-1/2 cup or 1 stick of melted butter
-1 16 oz bag of glutinous rice flour or an entire box of machiko rice flour
-2 tsp baking powder
-pinch or 1/4 tsp salt
Note:
In the video I separated wet from dry, but that’s me being a little extra. 😊
You can certainly do this all in one bowl,
starting with mixing together your eggs and sugar, then adding in the rest of your wet ingredients to include the gelatin and melted butter and combining them well
and then mixing in your dry ingredients until you form a smooth batter.
One step that’s missing from the video is me brushing on melted butter on top of the mochi as soon as it came out of the oven. just to give it a more glossy color and of course add additional buttery goodness!
One more thing, be sure to give it about 20 minutes before eating the center will be really hot…
Dont freak out!:
It’s totally normal for your batter to be thick, but if you notice it’s too far from what is seen on the video then you may add an additional quarter cup of coconut milk or whole milk totaling one can plus a half a cup.
Keep in mind this is a flexible recipe not unbreakable so do not overdue the amount of liquid you put in 😊 .

Also, I’ve made this recipe using two packs of sugar-free Kool-Aid increasing the amount of sugar to 2 cups and using heavy cream and almond milk  in place of the coconut milk Now although I prefer my Jell-O version, in the event, I do not have any strawberry Jell-O on hand, but I do have Kool-Aid. This is where I’m running and that was pretty awesome too!… 😋
