Coconut Macaroons from 1952
Ingredients
235 g / 3 cups dessicated coconut
150 ml / 2/3 c sweetened condensed coconut milk
1 tsp vanilla essence
3/4 tsp almond extract
Method
In a bowl mix together all the ingredients until evenly dispersed and sticky. On a lined baking sheet, drop into 1 TB sized balls evenly spaced. You can shape them with your hands into small domes if you would like. Bake in a preheated oven at 180 C / 350 F for 8-10 minutes or until delicately golden the edges brown. Let sit for a few minutes on the tray and then remove to a wired rack to cool.
