Broccoli Pickle!!

Ingredients
250 grams broccoli florets (ब्रोकली)
2 tsp Mustard seeds (सरसों)
1 tsp cumin seeds (जीरा )
1 tsp coriander seeds (धनिया )
1 tsp fennel seeds (सौंफ)
1/4 tsp fenugreek seeds (मेथी)
3/4 tsp chilli powder (मिर्ची पाउडर)
1/2 tsp turmeric powder (हल्दी पाउडर)
1/4 tsp onion seeds (कलौंजी)
1/4 tsp carom seeds (अजवाइन)
1/4 tsp Hing (हींग)
6 garlic cloves
2 tbsp vinegar ( you can increase or decrease as per your choice)
1/2 cup mustard oil (सरसों तेल)
Salt to taste
Instructions:
1. Boil water with a tablespoon of salt. Blanch the broccoli florets for 2 minutes. Strain and put them into cold water (This will stop the cooking and retain the green colour).
2. Strain the broccoli and wipe it down completely dry with a kitchen towel. Keep it aside.
3. Heat a pan and add mustard seeds, cumin seeds, fenugreek seeds, coriander seeds, fennel seeds and 1/4 teaspoon of salt. Roast the spices on a low flame for 1-2 minutes until fragrant.
4. Transfer the roasted spices to a mortar and pestle and grind it into a coarse powder (You may use grinder and grind the spices on a pulse mode).
5. Heat mustard oil in a pan until smoking hot. Turn off the flame and add garlic slices and hing. Let it cool down.
6. Add dry broccoli florets to a big mixing bowl. Add turmeric powder, chilli powder, kalonji, ajwain, 2 tablespoons of ground powder and salt to taste. Mix well.
7. Add mustard oil and vinegar and mix it well.
8. Store it in a sterilised glass jar. Stays good for 7-8 days at room temperature. Store it in a refrigerator for longer shelf life.
9. Broccoli pickle is ready to eat.
