Karimeen Pollichathu
Ingredients
1. Pearl spot (karimeen) – ½ kg (2 nos)
2. Salt -to taste
3. Lemon juice – ½ of 1 lemon
4. Turmeric powder – ½ tsp
5. Coconut oil - 4 to 5 tbsp
6. Big onion chopped – 4 to 5
7. Crushed ginger – 1” piece
8. Crushed garlic – 5 to 6 cloves
9. Tomato chopped – 3
10. Green chilli – 2 to 3
11. Chilli powder – 1 to 1 ½ tsp
12. Coriander powder – 1 to 1 ½ tsp
13. Pepper powder (opt) – 1 tsp
14. Coconut milk – 1 ½ cup
Preparation
1. Smear the lemon juice, a little pepper powder, turmeric powder & salt on either side of the fish & keep aside in oil for 2 minutes each aside.
2. Sauté ginger, garlic, green chilli, big onion, tomato, chilli powder, coriander powder, add coconut milk, salt, turmeric powder boil well, place the sautéed fish, boil 2 to 3 minutes.
3. On a fire sautéed plantain leaf arrange onion rings, green chilli, curry leaves etc. as shown, arrange the masala above, place the fish above it. Repeat the same on the top of the fish & pack as shown.
4. Again, cook the packet on the dosa griddle smearing a teaspoon of coconut oil till the leaf is reddened on either side.
