Mashed Potato Squash / How to Cook White Squash

I had never heard of mashed potato squash before but I saw it at the pumpkin farm I go to every year so I thought it would be neat to try. I like mashed potatoes so I wanted to see if this did really taste like that. It had the texture of mashed potatoes and did taste like mashed potatoes but with a hint of squash. I would say it is the least squash tasting of all the squash I've had. I liked it!
Mashed Potato Squash
Ingredients:
1 Mashed Potato Squash
butter, to taste
salt, to taste
Directions:
Cut squash in half. (If this is difficult, microwave for 3-5 minutes and then cut in half.)
Scoop out the seeds.
Poke a few holes in the squash.
Fill 9" x 13" baking dish with about 1/4" of water.
Place squash cut side down in a pan.
Tent pan with aluminum foil.
Bake at 350ºF for 30 minutes.
Squash is done if a knife slides easily through the skin.
Scoop out the squash and season with butter and salt to your taste.
Refrigerate leftovers in an airtight container.
Enjoy!
