🧡Ingredients (about 26-28 pieces)
100 g blanched almond flour
260-270 g all-purpose flour (I use unbleached-mine is finely grind )
1/2 tsp baking powder
220 g butter (room temp)
100 g granulated sugar (or caster even better)
2 tsp vanilla extract
1/2 tsp almond extract
pinch of salt
1 large egg (room temp)
jam (about 1 tsp for each cookie)
powdered sugar
cutter size – 7 cm (2 3/4 in)
freeze for 5 min before baking
bake in a preheated oven at 175°C/350°F for about 10-12 min
(or until the edges are lightly browned)
It’s important to watch the dough consistency as shown in the video. We all have different flour and the egg size could be different. So, you may need a little more or less. Therefore, adjust the flour amount when needed. Make sure not add to too much.
Store in an airtight container at room temperature for up to 4 days. (cookies will soften over time) Also, you can freeze them for up to 2 months.
