Описание:
2 packs of frozen 500 grams cassava leaves (pondu or sakasaka) completely defrosted.
1 litter of cold water.
1 large onion
1 large green bell pepper
1 aubergine
6 spring onions
1 tablespoon minced garlic
1/4 cup extra virgin olive oil
1/2 cup palm oil
500 ml hot vegetables stock ( or water)
For the seasonings I used
1 teaspoon smoked paprika
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon ground nutmeg
1/2 teaspoon black pepper
1 teaspoon salt or to taste
3 cans of mackerel or sardine in sunflower oil (can were 125 gram each)
1 cup of raw groundnut ( can substitute with 1/2 cup of peanut butter)
More water if needed.
