Here's the recipe:
1 ½ c. shredded Cheddar cheese
1 c. shredded pepper jack cheese
8 ounces cream cheese, softened to room temperature
½ cup mayonnaise
¼ c. chopped roasted red bell pepper
¼ teaspoon garlic powder
¼ to ½ teaspoon ground cayenne pepper, to taste
1 scallion, thinly sliced
salt and black pepper to taste
Mix all the ingredients in a mixing bowl until well blended. Serve hot or cold.
To serve hot, place the mixture in an ovenproof baking dish and bake at 425 degrees for 15 to 18 minutes.
Refrigerate remaining pimento cheese.
