HEALTHY VANILLA CUPCAKES | easy gluten-free recipe with healthy frosting

These Healthy Vanilla Cupcakes are moist, light and fluffy. They are gluten-free, lower in sugar, and contain no butter or white flour. We top these healthy cupcakes with Greek yogurt frosting. And yes, they are so easy! ⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️
►INGREDIENTS for CUPCAKES:
2 large eggs
1/2 cup maple syrup or honey
1 cup Greek yogurt
1 tsp vanilla extract
1 lemon, lime or orange, zest of
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3 cups almond flour

►DIRECTIONS for CUPCAKES:
1. Preheat oven to 325 degrees F. Line 12 muffin tin with parchment paper muffin liners and spray with cooking spray. Set aside.
2. In a large bowl, add eggs, maple syrup, yogurt, vanilla extract, lemon zest, baking powder, baking soda and salt. Whisk very well until combined and no lumps.
3. Add almond flour (make sure to level the top with knife and do not pack) and stir gently with spatula until well mixed. Batter will be runny.
4. Using an ice cream scoop, divide batter between 12 openings of previously prepared muffin tin and flatten with spatula. Bake on the middle rack for 20 minutes or until the toothpick inserted in the center comes out clean.
5. Remove from the oven, let cool for 15 minutes, then transfer to a wire rack to cool off completely before frosting.
►INGREDIENTS for GREEK YOGURT FROSTING (for 12 cupcakes):
4 cups plain Greek yogurt, I used 2%
1 cup powdered sugar or erythritol
2 tsp pure vanilla extract

►DIRECTIONS for GREEK YOGURT FROSTING:
1. Line mesh strainer with coffee filters, linen kitchen towel or double folded paper towel, add Greek yogurt and place over a bowl to drain. Place in a fridge to drain for at least 6 hours or preferably overnight (I did). Don't skip this step otherwise frosting will be too runny.
2. In a large mixing bowl, add strained yogurt, powdered sugar and vanilla extract. Using an electric mixer on high speed, whip all ingredients until smooth and creamy, making sure to pause and scrape down the sides. Should take about 2 minutes. Refrigerate until ready to use.
3. If using piping bag, use 2A tip by pressing it in the center of the cupcake and lifting while pushing the frosting out. Or fill a sandwich bag, cut off the tip and pipe the frosting. Also can spread with spatula.
