Healthy Methi + Drumstick Leaves Paratha
Ingredients
7 cups wheat flour
3 cups besan (gram flour)
Finely chopped greens (total quantity as preferred):
70% methi (fenugreek) leaves
30% drumstick (moringa) leaves
½ tsp ajwain (carom seeds)
½ tsp haldi (turmeric powder)
Salt to taste
1 tsp oil
Water (as required to knead)
Method
Prepare the greens
Wash methi and drumstick leaves thoroughly. Finely chop them and keep aside.
Mix dry ingredients
In a large bowl, add wheat flour, besan, ajwain, haldi, salt, and the chopped greens. Mix well so the greens are evenly distributed.
Knead the dough
Add oil and gradually add water. Knead into a soft, smooth dough.
Cover and let it rest for 10–15 minutes.
Shape the parathas
Divide the dough into equal portions. Roll each portion into a medium-thick paratha using dry flour.
Cook
Heat a tawa and cook the paratha on medium heat from both sides until golden spots appear. Apply a little ghee or oil if needed.
Serve hot
Serve with curd, homemade butter, or a mild vegetable curry.
