A simple yet flavorful Maharashtrian-style flower (cauliflower) and potato sabji made with everyday spices. Perfect for daily lunch or dinner with chapati or rice. The mild spice and homely aroma make it everyone’s favorite comfort food.
Ingredients:
.75 kg. cauliflower (flower) florets
2 medium potatoes (aalu), chopped
2 tbsp oil
1 tsp cumin seeds
2 onion, finely chopped
1 tomato, chopped (optional)
1 tsp ginger-garlic paste
1Cup Onion & Tomato paste
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
Salt to taste
Fresh coriander for garnish
Method (short):
1. Heat oil, add cumin, hing.
2. Add onion & sauté till golden.
3. Add ginger-garlic paste, tomatoes, and spices.
4. Add potatoes & cauliflower, mix well.
5. Add a little water, cover & cook till soft.
6. Garnish with coriander & serve hot.
