Marmalade Loaf delight your taste buds with a zesty marmalade loaf cake—moist, citrusy, and perfect for a sweet treat anytime. Simple to make and bursting with orange flavour, it's a must-try for marmalade lovers!
Ingredients:
• ½ cup (115 g/ 4 oz) Butter or Margarine (softened)
• ½ cup (115 g/ 4 oz) Caster Sugar
• 2 Medium Eggs (at room temperature)
• Zest of 1 Orange
• ½ tsp Vanilla Extract
• 4 tbsp Orange Marmalade
• 3 tbsp Milk
• 1 ½ cups (200g/7 oz ) Self-raising Flour
Method:
1. Preheat your oven to 180°C (160°C for fan-assisted ovens, or Gas Mark 4). 2. Line a 2lb loaf tin with a liner or greaseproof paper and set aside.
3. In a large mixing bowl, cream the butter or margarine with the caster sugar until the mixture is light and fluffy.
4. Beat in the eggs one at a time, mixing well after each addition. Stir in the orange zest, vanilla extract, marmalade, and milk until well combined.
5. Sift in the self-raising flour and gently fold it into the mixture to form a smooth batter.
6. Pour the batter into the prepared loaf tin and bake in the preheated oven for 45-55 minutes, or until the cake has risen, turned golden, and a skewer inserted into the center comes out clean.
7. While the cake is still warm, spoon a little extra marmalade on top and spread it evenly with a spoon to create a light glaze.
8. Allow the cake to cool completely in the tin before removing and slicing to serve.
