We have started getting the Keto selections off of Green Chef and we decided to start documenting the process of me cooking them and give an honest review of how they were. Hopefully some of you find this interesting and/or informative. I will include the recipe and the nutritional information for anyone who is curious. These recipes and the cards included with the meals are very easily found online.
This was the Baked Ricotta Chicken with Pesto Green Beans. It is Low carb, Keto, and gluten free.
Opinions:
Kore: This was fairly simple to make and I really like that aspect. Unfortunately I thought it was a little bland. I still really liked it and loved the green beans. I wouldn't mind eating this again!
Aides: This was very bland to me. It's unfortunate because I had high expectations, the picture looked very good and what isn't to like about baked chicken covered with ricotta and roasted red peppers? I'm not saying that it wasn't good, it just wasn't as flavorful as most of the recipes that we receive from green chef are. I'd eat it again in a heart beat but I won't order it again or attempt to remake it.
Recipe
Cook Time: Approx 30 minutes
Servings: 2
Ingredients
4 oz ricotta cheese
1 oz roasted red peppers
6 oz green beans
2 (5 oz) chicken cutlets
1 tsp oregano-garlic seasoning
2 oz mozzarella cheese
1 1/4 oz basil pesto with parmesan
Directions:
Prep
1. Place ricotta cheese and roasted red peppers in a small bowl. Season with salt and pepper, stir to combine.
2. Trim stems ends off green beans. Cut into pieces about 1/2 inch long.
3. Pat chicken cutlets dry with paper towels. Season with oregano-garlic seasoning, salt, and pepper.
Cook
1. Preheat oven to 425 degrees F/ 218 degrees C.
2. Place chicken cutlets in a single layer on a lightly oiled, foil-lined baking sheet. Spread ricotta mixture over each cutlet. Sprinkle mozzarella cheese on top.
3. Bake 12-16 minutes, or until fully cooked and mozzarella is melted.
4. Heat about 1 1/2 tablespoons cooking oil in a medium sauté pan over medium-high heat. Add green beans to hot pan. Season with salt and pepper.
5. Cook 4-5 minutes, or until tender, stirring occasionally.
6. Stir in basil pesto with parmesan. Season with salt and pepper to taste.
Plate
1. Divide baked ricotta chicken between 2 plates.
2. Serve pesto green beans on the side.
