Grand Isle Jewels are premium, sustainably cultivated oysters grown off-bottom in the waters of Grand Isle, Louisiana — part of a growing effort to brand the region as a hub for boutique aquaculture. Launched in 2025 by Jefferson Parish Economic Development Commission (JEDCO), the oysters are raised in floating cages rather than on the seafloor, producing a cleaner, saltier, and more consistent oyster than traditional bottom-harvested varieties. In this week’s Good News LA, LPB’s Christina Jensen joins Kirk Creole of Bayside Oysters for a firsthand look at how these oysters are carefully harvested — highlighting both innovation in sustainability and the revival of Louisiana’s coastal seafood economy.
