Ingredients:
Mooncake Pastry
(饼皮材料):
300g plain flour (普通面粉)
1/4 tsp baking soda (苏打粉)
240g mooncake syrup/golden syrup (糖青) • Mooncake Syrup Making 糖青/月饼糖浆煮法
75g peanut oil (花生油)
1/2 tbsp alkaline water(碱水)
Filling :
350g grated coconut (白椰丝)
150g caster sugar (细砂糖)
100ml pandan juice ~ 4 pandan leaves blended with 100ml water (4片班兰叶加入100毫升水打烂)
1/2 tsp salt (盐)
2 tbsp oil (油)
60g fried glutinous rice flour/ Gao flour (糕粉)
For glazing :
1 egg yolk (蛋黄)
2 tbsp egg white (蛋白)
A pinch of salt (少许盐)
