Fry Chanay is a popular dish in Pakistan, especially in Rawalpindi. It is made from chickpeas (chanay) that are cooked and then fried with various spices. The dish is often served with puri or kulcha. Would you like a recipe for Fry Chanay?

Certainly! Here's a simple recipe for Fry Chanay:

Ingredients:
2 cups chickpeas (chanay), soaked overnight and boiled until tender
3-4 tablespoons oil or ghee
1 large onion, finely chopped
2-3 cloves garlic, minced
1-inch piece of ginger, grated
2 tomatoes, finely chopped or pureed
1 teaspoon cumin seeds
1 teaspoon red chili powder (adjust to taste)
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Lemon wedges for serving

Instructions:
1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
4. Add chopped tomatoes or tomato puree to the pan. Cook until the tomatoes are soft and oil starts to separate.
5. Add red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
6. Add the boiled chickpeas (chanay) to the pan and mix well with the spice mixture.
7. Cook the chickpeas for 10-15 minutes, stirring occasionally, until they are well coated with the spices and have a slightly fried texture.
8. Sprinkle garam masala and mix well. Cook for another 2-3 minutes.
9. Garnish with fresh coriander leaves.
10. Serve Fry Chanay hot with puri, kulcha, or naan, and lemon wedges on the side.
