Ingredients
2 tbsp cooking oil if needed
1½ lbs ground beef or preferred
4–5 medium russet or Yukon Gold potatoes, diced
1 shallot diced
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, finely chopped
1 tbsp tomato paste
2 tsp Cooking with Tammy All-Purpose Seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
Salt, to taste
Black pepper, to taste
1 tsp beef bouillon
1½ - 2 cups beef broth
1½ cups shredded cheddar cheese or Colby Jack cheese, or preferred

*Cover with a lid and cook for 18-20 minutes or until fork-tender.
*Lower the flame when adding the cheese and cover with a lid, until melted
