AUTHENTIC THAI BASIL TOFU (TOFU PAD KRAPOW)
Full Thai Flavor
Ingredients:
Tofu: 1 block (250 – 300 gr) Firm Tofu
Tofu Coating: 1/2 tsp Salt, 1/4 tsp Pepper, 1 tbsp Corn Starch
Aromatics: 1/2 Red Onion (finely chopped), 1 cup Thai Basil Leaves
Seasoning: 1 tbsp Sugar, 1 tsp Mushroom Stock Powder, 2 tbsp Cooking Oil
Chili Paste Ingredients:
Bird Eye Chili: 10 (or to preference)
Large Red Chili: 3 to 4
Garlic: 5 cloves
Sauce Ingredients:
Water: 120 ml
Fish Sauce: 2 tbsp
Sweet Soy Sauce: 2 tbsp
Dark Soy Sauce: 1 tbsp
Light Soy Sauce: 1 tbsp
Cooking Method:
I. Preparation
1. Press the tofu to remove excess moisture. Crumble it into chunks or cut into small, bite-sized cubes.
2. Toss the tofu with the salt, pepper, and corn starch until coated.
3. Grind or blend the garlic, bird eye chilis, and large red chilis into a coarse paste.
4. In a small bowl, combine all sauce ingredients (water, fish sauce, sweet soy sauce, dark soy sauce, and light soy sauce).
II. Cooking
1. Heat 2 tbsp oil in a large skillet over medium-high heat. Stir-fry the tofu until golden and crispy on all sides (about 5-7 minutes). Remove from the heat and set aside.
2. Add a little more oil if needed. Sauté the chopped red onion and the chili paste until fragrant.
3. Add the fried tofu crumbs back into the pan. Stir well.
4. Pour in the mixed sauce. Add the sugar and mushroom stock powder. Cook, stirring constantly, until the sauce thickens and coats the tofu.
III. Finishing
1. Turn off the heat. Add a generous amount of Thai basil leaves. Stir quickly until the basil wilts (about 15-20 seconds).
2. Serve the Tofu Pad Krapow immediately with steamed white rice, optionally topped with a fried egg.
