I love baking, but here’s the truth most people don’t talk about:
a lot of homemade muffins are still loaded with ingredients that don’t do us any favors.
In this video, I’m making blueberry lemon muffins and showing:
The ingredient swaps I use to make them healthier
How you can still get great texture and flavor
And why small changes add up more than “perfect” recipes
🫐 Recipe
3/4 c. cottage cheese
1/2 c. maple syrup
1 tsp. vanilla
2 T. lemon juice
2 eggs
1/4 c. coconut oil
2 scoops of vanilla protein powder
3/4 flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. lemon zest
1 c. blueberries
Fill your cupcake pan. Top with more blueberries
Then mix together:
1 scoop of vanilla protein powder
1/3 c. swerve brown sugar
2 tsp. zest
2 T. butter
Bake for 25 - 30 minutes at 350 degrees
These are easy, realistic swaps—nothing extreme and nothing complicated.
