Olan is an important side dish of onam sadya .Ash gourd , pumpkin and black eyed beans are the main ingredients which are cooked in the coconut milk and a drizzle of coconut oil give a nice flavor to this curry..Its very simple and tasty..
INGREDIENTS
Black eyed beans / vanpayar - 1/2 cup (washed and
soaked for 5 hours)
Ash gourd /kumbalanga - diced , 1 small bowl(skin and seeds
removed)
Pumpkin - diced , 1 small bowl (skin and seeds removed)
Green chilies - 4no.s , slitted
Garlic cloves - 2 no.s
Curry leaves - few
Thick coconut milk - 1.1/4 cup
Coconut oil - 1 tbsp
METHOD
Pressure cook the soaked beans by adding 1/2 - 3/4 cup water and salt for 1 or 2 whistle..
Cook together , ash gourd , pumpkin , green chilies , garlic cloves and curry leaves by adding little salt and 1/2 cup water until tender .don't over cook this , Once its done open the pot and add the cooked beans without its water then followed by thick coconut milk , stir and cook on low flame until it starts to boil.once it begins to boil stir and switch off the stove , drizzle coconut oil and few curry leaves then close the pot for 10 minutes ..then serve..
