Love soup is a beautiful blending of a raw beet borscht topped with a cashew garlic/dill sour cream. Beets are low in calories, nutrient dense and loaded with antioxidants. They contain vitamins A,B & C, Folate, Calcium, Potassium, Magnesium and oodles of iron! Additionally, Beets contain betaine which helps to lower homocysteine levels in the body (elevated homocysteine levels can lead to heart disease, stroke and/or arterial plaque). Incorporating Beets into your diet on a regular basis will bring a gorgeous luster to the skin, improve digestion, protect the body against free radical damage, cleanse the liver AND purify & build the blood. CASHEW GARLIC/DILL SOUR CREAM:
1 C cashews, soaked for 2-4 hours, rinsed and drained
juice from 1/2 lemon
1/2 Tbsp unpasteurized chick pea miso (I like South River brand)
2 cloves fresh garlic
1/4 C fresh dill, finely minced (reserve)
1 C filtered water
2 tsp ACV (raw apple cider vinegar - BRAGGS is a good brand)
pinch of Pink Himalayan Salt
Put all ingredients (except for the dill) into a high speed blender and blend until smooth and creamy. Fold in the dill (reserve a little bit for garnish), pour into a bowl and set aside for flavors to develop while making the Beet Borscht.
BEET BORSCHT:
2 medium/large size beets, peeled and quartered (reserve half of one beet and finely dice for garnish)
2 medium carrots, chopped
1 large roma tomato, quartered
1 apple, cored, peeled and quartered
juice from 1/2 lemon
1 large shallot, quartered
1/2 - 1 jalapeño, quartered (remove seeds and membrane to reduce heat)
1 C filtered water
1 tsp Himalayan Pink Salt
Put all ingredients (except finely diced beets for garnish) into a high speed blender and blend until very smooth, adding in more water if a thinner soup is preferred. Pour into your favorite bowl, top with the sour cream, garnish with the reserved diced beets and dill ~ Enjoy xo
