Crispy Onion & Potato Pakoras Recipe
Ingredients:
• 1 large onion, thinly sliced
• 2 medium potatoes, finely grated
• 1 cup gram flour (besan)
• 2 tablespoons rice flour
• Juice of 1 lemon
Spices:
• ½ teaspoon cumin powder
• ½ teaspoon whole cumin seeds
• 1 teaspoon coriander powder
• ½ teaspoon red chili powder
• ½ teaspoon crushed red chili flakes
• A pinch of black pepper (about 2 pinches)
• 1 teaspoon salt (or to taste)
• 3 medium green chilies, finely chopped
For Frying:
• Oil, as required

Method:
1. In a large mixing bowl, add sliced onion and grated potatoes.
2. Add gram flour, rice flour, lemon juice, green chilies, and all the spices.
3. Using your hands, mix and rub everything together very well until the vegetables release moisture and a thick mixture forms.
4. Cover the bowl and let the mixture rest for 30 minutes. This resting time helps enhance flavor and texture.
5. Heat oil in a deep pan over medium heat.
6. Once the oil is hot, drop spoonfuls of the mixture into the oil.
7. Fry until the pakoras turn golden brown and crispy from all sides.
