🍤 PRAWNS BIRYANI RECIPE (Serves 3–4)
🧺 Ingredients
For Marination
Prawns (cleaned & deveined) – 500 g
Curd (yogurt) – ½ cup
Ginger-garlic paste – 1 tbsp
Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Biryani masala / Garam masala – 1 tsp
Lemon juice / Tamarind water– 1 tbsp
Salt – as per taste
👉 Mix well & marinate for 20 minutes
For Rice
Basmati rice – 2 cups
Water – 8 cups
Bay leaf – 1
Green cardamom – 2
Cloves – 4
Cinnamon – 1 inch
Salt – 1 tbsp
👉 Cook rice till 70% done, drain & keep aside
For Biryani Masala
Oil – 3 tbsp
Ghee – 2 tbsp
Whole spices:
Bay leaf – 1
Cardamom – 2
Cloves – 4
Cinnamon – 1 inch
Onions (thin sliced) – 3 large
Green chillies – 2 (slit)
Ginger-garlic paste – 1 tbsp
Tomatoes (chopped) – 2 medium - you can skip
Mint leaves – ½ cup
Coriander leaves – ½ cup
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt – to taste
👩🍳 Method
1️⃣ Prepare Masala
Heat oil + ghee in heavy pan - Ghee is optional
Add whole spices → sauté till aromatic
Add onions → fry till golden brown
Add ginger-garlic paste → sauté well
Add tomatoes or Tamarind water + salt → cook till soft & oil separates
2️⃣ Cook Prawns
Add marinated prawns
Cook on medium flame for 3–4 minutes only
⚠️ Do not overcook prawns
3️⃣ Layering
Lower flame
Spread cooked prawns evenly
Add rice layer on top
Sprinkle mint, coriander
Add:
Saffron milk / rose water / kewra water (optional)
1 tbsp ghee
4️⃣ Dum Cooking
Cover tightly
Cook on low flame for 15–20 minutes
Switch off & rest for 5 minutes
🍽️ Serve With
Raita
Lemon wedges
Onion salad
