VEGETARIAN LAMB CURRY (Serves 5 – 7)
REMPAH (SPICE PASTE) INGREDIENTS
Dried chili (Soaked and cut into small pieces) - 10 pieces
Red chili (Cut into small pieces) - 10 pieces
Buah Keras (Soaked and crushed) - 5 pieces
Blue ginger (Peeled and cut into small pieces) - Thumb-size
Ginger (Peeled and cut into small pieces) - Thumb-size
Turmeric (Peeled and cut into small pieces) - Thumb-size
Lemongrass (Peeled and chop lower bulb portion) - 1 stalk
CURRY INGREDIENTS
Mock lamb - 1 packet
Potatoes (Peeled and roll-cut) - 2 pieces
Tau Pok (Washed and squeezed dry, cut into half) - 4 pieces
Coconut milk - 1 small packet
Low fat evaporated milk - Half bowl
Curry leaves - Small portion
Lemongrass (Peeled and pounded) - 1 stalk
PREPARING REMPAH:
1. Blend all rempah ingredients; set aside
COOKING CURRY:
1. Fry potatoes in oil till medium-well; set aside
2. Using leftover oil, fry rempah till fragrant, season with salt and sugar
3. Once the paste is ready, add in lemongrass and curry leaves
4. Add water and tau pok
5. Pour in coconut milk
6. Add potatoes and mock lamb
7. Finally, pour in evaporated milk, stir evenly
8. Season with salt and sugar, add more water, coconut milk or evaporated milk to get your preferred thickness and taste
