Описание:
This is just as delicious as french onion soup, but is not as rich. It has a delicate flavour because the onions are cooked slowly to bring out their sweetness and tone down their fiery, bitter flavour that you associate with raw onions.
I used:
4 onions, sliced
1 clove garlic, crushed
1stick celery, 1 carrot and 1 onion, finely chopped
few sprigs thyme
1-2tbsp brandy
1 pint beef stock (you could use vegetable or chicken)
knob butter, for frying
drizzle of oil, for frying
4 tbsp double cream. Add to taste
salt and pepper
Serve with grated parmesan or croutons or crispy bacon pieces.
