Hi folks and welcome to Tony's Comfort Kitchen. This easy chicken parmesan recipe to me sums up all that is good with comfort food. I would go as far as to say that the mix of chicken, cheese and tomato sauce is the holy trinity of comfort food ingredients haha!! Do you agree? Please give it a try, it is delightful :)
Ingredients
2 chicken breasts
Seasoned flour, around 2-3 tbsps
Breadcrumbs, again around 2-3 tbsps
2 eggs plus a little water
2 tbsp olive oil
1 medium onion
2 anchovy fillets
2-3 cloves garlic
400g tin chopped tomatoes
1 chicken stock cube
200ml water
1 tbsp concentrated tomato puree
1 heaped tsp oregano
1/2 tsp smoked paprika
1/2 tsp sugar
150g grated mozzarella
60g parmesan
salt and pepper to taste
