1 egg yolk
Almond extract: 1 tsp
Caramel Filling: (can substitute with any nuts of your choice)
Walnuts: 25g
Whole Almonds: 25g
Sliced Almonds: 25g
Hazelnuts: 25g
Sugar: 250g
Cream: 250g
Salt: 5g
Gelatin: 1 sheet bloomed
Mascarpone Cream:
Cream: 100g
Mascarpone: 50g
Confection sugar: 5g
1 Vanilla bean pod OR 1 tsp vanilla extract
