I love when bread makes that crackling sound as it cools. As you can see, it doesn't move.....
This is a good pagnotta (Italian country bread) made with a biga (starter). The crust is crunchy and the center soft.
I used about 20% - 25% whole wheat flour with the rest made up of swany white organic unbleached flour.
