A Sri Lankan man climbing up palm trees to collect the white milky sap from the palm flowers. This is an ancient tradition back dating to around 2000 years ago. The white fluid is a beverage that is used to make alcoholic arrack that is locally known as coconut toddy. The sap is sweet, tangy and slightly spicy, with a strong coconut smell. The natural sugars and yeast naturally ferment the liquid into Coconut Arrack, a whisky type drink that is distilled similar to whisky to make the coconut toddy. There are only two ingredients, sap and water. The coconut sap is the raw material for the arrack. The man will climb high ropes and walk between trees to collect the sap from the flowers, where he will pour into a pot until full and then lower to the ground so it can be emptied into a bucket, and the pot pulled back up so he can carry on filling it up. This takes place twice a day, in the morning and early afternoon.
