Misal Pav is a traditional spicy Maharashtrian snack recipe consisting of sprouted bean curry topped with crunchy farsaan, nylon sev, crisp onions, lemon and finely chopped coriander leaves that is served with soft pav (bread). Misal Pav has been a hot favourite on the bustling streets of Mumbai and other places in Maharashtra.
Traditionally, Misal is a little on the spicier side and you’ll find different varieties of this snack being served in different regions.
[Ingredients]:-
Sprouted Beans - 2 cups
Salt as per taste
Turmeric powder - ½ tsp
Water - 6 cups
For Masala:-
Coriander seeds - 2 tbsp
Cumin seeds - 1 tbsp
Sesame seeds - 1 tbsp
Cinnamon - 1 inch
Cloves - 10 pieces
Stone flower / Dagad Phool - 2
Pepper corn - ½ tbsp
Star Anise - 1
Fennel seeds - 1 tsp
Fresh coconut - ¼ cup
Garlic cloves - 15
Kashmiri red chilli powder- 5 tbsp
Coriander leaves- ¼ cup
Salt as per taste
Water
For Matki Usal:-
Oil - 1 tbsp
Mustard seeds - ½ tsp
Cumin seeds - ½ tsp
Curry leaves - 1 sprig
Onion - 2 nos.(finely chopped)
Salt as per taste
Ginger Garlic paste - 1 tbsp
Tomato - 1 no.(finely chopped)
Coriander leaves - 2 tbsp
For Rassa:-
Oil - 4 tbsp
Mustard seeds - 1 tsp
Cumin seeds - ½ tsp
Curry leaves - 1 sprig
Onion - 1 no.(finely chopped)
Kashmiri red chilli powder- 2 tsp
Ginger Garlic paste - ½ tsp
Coriander leaves - 1 tbsp
Tomato - ½ no.(finely chopped)
Jaggery - 1 small piece
To serve:-
Farsan, Finely chopped onion, Nylon Sev, Chopped Coriander
