Hello, I hope you had a good weekend; this is how I make my fruit loaf or get two in one dough.
Festive loaf/sultana loaf
500g strong bread flour 100% ( 13 protein content)
50g starter 10% (feed 12 hours or less, depending on your temp, before mixing)
365g water 73%
8g salt 1.5%
170g of raisins
orange zest ( one orange and orange juice)
½ teaspoon of cinnamon
1 teaspoon of allspice
50g of agave nectar
50g of water
Day 1 or the same day you feed the starter.
Put the raisins in a bowl, add orange juice/ water, that extra 50g of agave nectar, and leave overnight to soak.
Day 2
▪ Autolyse (flour/water) for 1 hour
▪ Bulk 4 hours
▪ Pre-shape
▪ Shape
