Cocktail Ice Creams | Part 1
Toronto Chip 🍊🥃 (Attempt #3)
This is the first episode in my Cocktail Ice Creams series.
A Toronto is my favorite drink: Canadian rye whiskey (I use American), fernet, simple syrup, bitters, and orange peel. I originally discovered it from listening to The Sloppy Boys podcast (@thesloppyboys).
This version is called Toronto Chip:
a Toronto-inspired ice cream base with chopped dark chocolate mixed in.
This is Attempt #3, and it’s finally where I want it: balanced, lightly bitter, not overly sweet, with just enough chocolate. And tastes like the drink!

🍨 Toronto Ice Cream Base
Ingredients (grams)
Milk (3%): 430
Heavy whipping cream (36%): 380
Sucrose: 110
Light corn syrup: 50
Rye whiskey (Elijah Craig): 35
Refined coconut oil: 30
Skim milk powder (1%): 20
Fernet: 5
Vanilla extract: 3
Salt: 1.5
Bitters: 0.25
Stabilizers:
Locust bean gum: 0.8
Guar gum: 0.4
Lambda carrageenan: 0.2
Alternatives to Stabilizers above (untested but ooooh boy do that math be mathin):
~1.3 g xanthan gum
OR 70 g egg yolks (5–6 yolks)
Mix-In:
Chopped Ghirardelli chocolate chips: 100 g
Orange zest: 3-4 swipes of a microplane’s worth.
📝 Steps
1. Mix dry ingredients so stabilizers don’t clump.
2. Add the rest of the ingredients except cream, alcohol based ingredients, and vanilla.
3. Heat to 185°F while stirring (if using same stabilizers as me. For eggs heat to 180°F or thickened. For Xanthan Gum temp doesn’t really matter as much, just heat until lightly steaming).
4. Remove from heat and add cream, alcohol based ingredients, and vanilla.
5. Chill overnight
6. Churn, add chopped chocolate and orange zest at the end of churning, and load containers
7. Freeze overnight.
This ice cream is inspired by the cocktail. Not sweet like a dessert, not harsh like a drink. Just cold, smooth, complex, and chocolate-studded.
