Today, we're cooking one of Greece’s most beloved dishes – Fava, a velvety yellow split-pea purée that’s pure comfort in every bite. But we're not stopping at the basic version – we’re giving it a flavor upgrade that takes this classic meze to the next level!
We start by rinsing the split peas thoroughly, then gently soften red onion and garlic in extra virgin olive oil. Before adding any liquid, we toss in the split peas and give them a quick sauté – this step brings out a toasty depth of flavor.
Here’s the game-changer: instead of boiling the peas in plain water, we use homemade chicken stock. This one small change transforms the dish from simple to spectacular.
We season with fresh thyme, white pepper, and salt, then let everything simmer for about 45 minutes. Once the peas are tender, we blend the mixture with an immersion blender until it’s irresistibly smooth and velvety. To finish, we stir in the juice of two lemons, adding a bright, zesty kick that balances the richness beautifully.
