Chicken Fajitas
3 peppers sliced
1 onion diced
4 chicken breasts slices
1tbsp cumin
1 tbsp chili powder
2 tsp garlic
slice pepper, onions and chicken ND put on baking sheet. add seasoning and mix. Bake on 450 F for 25 min until chicken is cooked. serve with tortillas and your favourite toppings
Clam Linguine
1lb spaghetti or linguine noodles
1 cup pasta water reserved
6 tbsp olive oil or butter
6 cloves garlic
1 cup broth
1 onion diced
2lbs clam or omit for a vegetarian/ vegan meal
1/3 cup parsley
1tbsp lemon juice
cook pasta and reserve 1 cup water. Sautee onion, garlic 1 minute in olive oil or butter. Add broth and simmer. Toss in clams,, lemon and add reserved water and pasta. Add lemon juice and salt to taste. Toss and serve
Butternut Squash, Lentil and rice soup
1 tbsp olive oil
1 med onion
1 small squash diced
6 cloves garlic minced
1 tbsp cumin
2 tsp salt
1 tbsp apple cider vinegar
6 cups broth
1 cup lentils
1/2 cup brown rice
In a large pot heat oil, add onions and sautee until translucent. Add squash and cook 5 min, add garlic and cook 1 min. Add cumin, salt, apple cider vinegar then broth. Bring to a boil and add rice and lentils. Boil for 40-45 min until rice and lentils are fully cooked. Serve.
Chickpea fritters
2 cans chickpeas
3/4 cup flour
2 tbsp parsley
2 tsp cumin
1 tsp garlic
1 tsp salt
2 tbsp oil
Combine ingredients besides oil in bowl and mash until combined. Make patties and add to oiled frying pan. Fry for 5-7 minutes per side. Serve with a side salad or veggies.
