Today is a very special day on the homestead! It is our youngest daughters 11th birthday. We have some good traditions on the homestead and birthdays are one of the girls favorites. On our homestead the birthday person gets to pick out whatever meal they want for supper that night AND what type of cake they want. WHat will Samantha pick? You'll have to watch to find out!

Chocolate Whipped Cream Frost
4 cups heavy whipping cream, divided
1/2 cup sugar
1/4 cup cocoa powder
In a small saucepan, mix 1 cup cream, and sugar. Sift the cocoa powder into the cream mixture and mix thoroughly. Slowly warm on the stove top on medium heat stirring constantly until all of the sugar is melted and combined. Cool the chocolate mixture completely in the refrigerator until ready to whip.
When ready to whip, combine remaining 3 cups of cream with chocolate mixture. Beat slowly at first and then on high until peaks are very stiff. Frost cake immediately, or return to refrigerator until ready to use.
Hershey's Chocolate Cake
1 3/4 cups flour
2 cups sugar
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 oil
1 cup boiling water
Preheat oven to 350 degrees. Grease and flour 2 round baking pans.
Combine all dry ingredients in large mixing bowl.
Combine all of the wet ingredients in separate bowl.
Mix the dry and wet ingredients together and beat on medium speed 2 minutes. Stir in boiling water (batter will be thin).
Pour into pans. Bake 30-35 minutes or until tooth pick comes out clean. Cool 10 minutes in the pan and then remove to wire rack until completely cool. Frost.
Roasted Butternut Squash Topped with Chicken and Herbed Rice
2 small butternut squash
1/2 cup diced onion
1 clove garlic, minced
1 cup white rice
1 tsp dried Italian seasoning
1/4 tsp ground black pepper
1 bay leaf
2 cups chicken broth
2 cups cubed cooked chicken
1 cup shredded sharp cheddar cheese
Preheat oven to 375 degrees. Cut stem ends off the squashes. Slice the squashes in half lengthwise. Coat a rectangular baking pan with oil and place the squash cut side facing upwards. Rub cut sides with olive oil and sprinkle with salt. Roast uncovered for 45-60 minutes, or until flesh is browned and squash meat is tender.
In a rice cooker, combine onion, garlic, rice, Italian seasoning, pepper bay leaf and broth. Cook according to rice cooker instructions. When finished, transfer rice mix to a large bowl. Fluff the rice and mix in cubed chicken. If rice seems too dry, add some additional chicken broth.
To serve, place one squash half on each plate. Top with chicken and rice mixture. Sprinkle with 1/4 cup shredded sharp cheddar cheese.
Serve 4.
