Now you don’t have to buy Meat Masala because I am sharing the recipe of Meat Masala along with my Mutton Curry with you. This is the easiest Mutton Curry recipe you will ever find! And not just a Mutton Curry, the Meat Masala is better than any store bought Meat Masala. Mutton Curry takes a long time to cook but this is a one pot mutton curry that you can do very quickly and easily.

Recipe :

Meat Masala
1 tbsp black peppercorns
3 tbsp coriander seeds
2 tsp cumin seeds
6 green cardamoms
6 black cardamoms
4 2-inch pieces of cinnamon
5 bay leaves
2 tsp red chilli powder
1 tbsp cloves
1 tsp dried ginger powder
1 tsp garlic powder
1 tsp dried fenugreek leaves
1 tsp allspice
2 blades mace
2 pieces of nutmeg
1 tsp caraway seeds
2 star anise
¼ tsp turmeric powder
1 tbsp Bengal gram
½ tsp salt
Dry-roast the coriander seeds, cumin seeds and black peppercorns over medium heat till they are lightly coloured and fragrant.
Mix together all the other ingredients together with the roasted spices and grind to a fine powder store in an airtight container.

Mutton Curry:
500g Mutton
¼ cup yoghurt
1 tbsp ginger garlic paste
Salt to taste
2 tsp red chilli powder
1 tsp coriander powder
2 bay leaves
2-3 cloves
2” cinnamon
1 black cardamom
2 tbsp meat masala powder
1 cup sliced onions
3 tomatoes
2-3 green chillies
¼ cup mustard oil
Salt to taste
Method:
Mix together all the powdered spices in the yoghurt. Add the mutton pieces, mix well and marinate for about 15-20 minutes.
Heat the mustard oil to smoke point. Cool and reheat. Add all the whole spices and then the sliced onions. Sauté the onions till golden brown. Add the marinated mutton pieces and stir till the mutton acquires a glazed look and is well quoted with the oil- approx.. 4-5 minutes.
Slice the tomatoes and the green chillies and add to the pressure cooker. Wah the marinade bowl with ½ cup water and add to the pressure cooker. Mix well and close the lid. Pressure cook for 4-5 whistles. Open and check for doneness. You may need to cook for longer.
Add salt to taste, adjust gravy consistency as required by adding water as required.
Add kasuri methi, coriander leaves to garnish and serve.
