The Panther car from Watercar is a rip-roaring amphibious vehicle which tops out at 80+mph on land and 44 mph on water, It features a Honda 3.7 liter V6 engine, and conversion from land to water craft takes 15 seconds (just put it in neutral and flick a lever to get the jet propulsion operative).
You'll need a goodly amount of cash though, around $135,000 for the complete thing, although you can stump up just $75K for a rolling chassis and add your own engine and stuff.
