So when it comes to softening butter you've got three options. Out at room temperature for a while, in the microwave, in which case you get melty outside and cold core, or this way. So you just go ahead and start pounding on it and you know when you're done when, basically, this butter is so soft that you can drag your finger through it as if it were to spread on toast.
